Chocolate Chip Oatmeal Bars

These are a super quick, easy and yummy treat! I make these all the time when we need a treat in a hurry. Everyone always loves them! This recipe was introduced to me from Melanie at My Kitchen Cafe. Thanks so much!

Chocolate Chip Oatmeal Bars

1 3/4 cup flour

3/4 tsp soda

1/4 tsp salt

1 cup oatmeal

3/4 cup butter

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

12 ounces chocolate chips

Preheat oven to 375. Whisk together dry ingredients and set aside. Beat butter, sugars, egg and vanilla till fluffy and add dry ingredients. Stir in chocolate chunks and walnuts. Press into a greased 9x13 inch pan and bake for 18-20 minutes until light golden brown.

I have never used a 9x13. I have been baking these in a stoneware jelly roll pan (smaller than the common stainless steel cookie sheet). I only bake them for 15 minutes. You could double it and bake them in a regular cookie sheet.

Don't overbake!!!

  7. Melanie, These were so good and so easy! I just used half a pkg of choc chips, and they were perfect! I brought them to YW tonight and they were a hit. There were leftovers in the pan when I left but when I came home, they had been all eaten, so I think we can safely assume that Jed loved them too. :) Thanks a bunch!

  9. My mom has made these twice now and they are the END of me...I'm eating tomato soup and salads to save up the calories for these bad boys. Chopped walnuts, chocolate, oatmeal?? AUGH soooo good. I think she doubles the batch but smashes it all into one pan because they are HUGE. I LOVE IT!!!

  11. Fabulous. I was looking for a treat to send with my son on a trip abroad and, since airline food is dismal or nonexistent, thought these would fill the bill. Big hit! I added toasted, salted walnuts (it brings out the flavor to toast them first) and dried cranberries. Next time I'll experiment using half whole wheat flour. Thanks!

  13. I'm hoping to make these delicious bars tomorrow for a baby shower- BUT I have one question- is it cooked oatmeal or oats? I have regular oats- do I cook or leave raw? thank you!
