Taco Soup


This is the easiest soup you will ever make... and it is super yummy! It's great for having people over because #1 it is simple, and #2 it is fun. I love soups that allow you to put your own garnishes on them. I've made it with Turkey burger and hamburger, and it tastes great either way. So next time you are in a rush or it is just cold outside, throw this recipe together for an delicious meal! Thanks Stephanie Taylor for introducing this great recipe to me.

Taco Soup (Easiest Recipe Ever)

2 cans diced tomatoes (seasoned or regular)
1 can stewed tomatoes
1 can corn
1 can green beans (I like to use the french cut or string beans)
2 cans kidney beans
1-2lbs ground beef or turkey
1 packet taco seasoning (I like it better with 1.5packets)

Brown the meat, adding half of the seasoning packet. Bring all other ingredients to a slow simmer in separate pot. Add the other half of the seasoning packet while simmering. Add meat. Garnish with cheese, chips, green onions, and avocado.

  8. I also add a package of dry ranch dressing mix and it makes it taste "creamy". I have never put in green beans- but add more beans....blck beans, red beand, kidney, white.... its a very healthy recipe.

  9. I have made this soup a few times and we love it! The only problem is that it isn't very soupy. Is there a trick you use so it isn't so thick?

  10. Hi Larissa, I do not drain any of the vegetables or beans. I just open the can and dump them in, water and all. If you want to drain everything, I would just add water to taste to make it more "soupy."

  11. I just made this for dinner and YUMMY! I added a second can of corn, and a can of black beans. It made a lot, plenty for dinner tonight, a big container for later this week and one in the freezer for another time. I totally forgot to buy chips at the store but topped it with cheese lettuce and sour cream. Did I mention how yummy it was?
