This is such a simple, yummy bean soup recipe. The picture definitely doesn't do it justice. All the beans are great for you, and it tastes so good. It hit the spot on one of our recent snowy days. A tip: make sure you use a ham bone. Brittany tried it using pieces of ham without the bone, and she didn't think it was nearly as good.
Ham Bone Bean Soup

20 ounces mixed dry beans
1 lb ham (I just use a ham bone with lots of ham left on it)
1 cup onion, chopped (I used 1 large onion)
1 15 oz can stewed or diced tomatoes
1 tsp chili powder
Juice of 1 lemon
1-2 cloves of garlic, minced
Place rinsed beans in a pot with 3 quarts of water. Bring to rapid boil. Reduce heat, cover and continue boiling 60-70 minutes. After 60 minutes, add remaining ingredients. Simmer for 30-45 min. Remove ham bone, and remove any meat that hasn't fallen off with simmering and add to soup! Salt and pepper to taste.
Alternate method:
Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak overnight, or at least 8 hours. After soaking, drain water, add 2 quarts of water and meat. Bring beans to boil, reduce heat and simmer uncovered for 2.5 hrs. After simmering, add onion, tomatoes, chili powder, lemon and garlic. Simmer for another 30 minutes. Salt and pepper to taste.

ReplyDeleteSo...a snowy day, a leftover Easter hambone and a need for soup! While I usually gravitate to the vegetable soups, then hambone was crying out to be used. And it's delicious! I will definitely be making this one again. Add some fresh hot rolls and my youngest declares that "it's a feast!"
