Crepes


I first obtained this crepe recipe from my friend, Eugena. Since then I've seen it, or seen very similar versions of it, multiple times. Which means that this is a great recipe! This recipe makes a thin crepe that is super tasty, and best served with my favorite coconut syrup (of course!). Other than the fact that it is delicious, I really like this recipe because it is simple and quick. My four year old begs me for crepes on many a morning. I don't have to beat egg whites separately or do anything extra like that. It's simple. It's fast. It's fabulous. It's a staple around here!

My Favorite Crepes

1 ½ c. flour
1 Tbsp sugar
½ tsp baking powder
½ tsp salt
2 c. warm milk
2 eggs
½ tsp vanilla
2 Tbsp melted butter

Mix all ingredients together. Pour a small amount on a hot skillet and swirl it around to thin it out. Cook until nearly golden and then flip. Serve with coconut syrup. (yum, yum!)

  3. I love crepes but always have a hard time making them look decent in my pan. They always fall apart when I try and flip them. My favorite crepe topping is a squeeze of lemon followed by some sprinkled powdered sugar. Mmmmm.

  5. Vanilla makes a great addition to sweet crepes. I recently added some vanilla bean paste -- that works well, too. Yours look yummy!

  7. What did you fill them with (Bad Endglish I know)? I wonder what fillings would go well with coconut syrup.

  9. My boys beg for these too! We always butter them hot off the pan and then sprinkle the inside with powdered sugar--roll up and serve with maple syrup or starwberry jam. (oh and I my favorite it raspberry butter--I will have to post my recipe for that--mmm) When you have 5 boys you have to make a lot and it takes a LONG time to make them one at a time. So, we rarely have these anymore--except on birthdays when they are requested:)

  10. Hi Memória! I store the coconut syrup in the fridge for a couple of weeks. We usually go through it pretty quickly, though, because I like it on all our breakfasts - be it waffles, pancakes, crepes, ebleskivers, etc. :)

    As for fillings, there have been times that I've loaded up the table with all kinds of things, like nutella, yogurt, strawberries, whipped cream, etc, but it always comes down to the same thing - I just love my coconut syrup! So I usually just drizzle some syrup in the middle of it, roll it up, and then drizzle some one top. That's how I like them best.

  11. Just made these this morning. LOVE THEM!! I halfed the batch because I knew I would eat them all if they were just sitting there. THEY were so easy and so tasty!! I'm hooked!
