Fiesta Ravioli & a Busy Mom GIVEAWAY!


This is one of those quick and easy meals, that I can whip together in a few minutes when I am short on time and have hungry little mouths to feed. I got this recipe from my friend Stephanie a couple of years ago. It is a huge hit with my boys. Connor my oldest LOVES pasta and TJ my second oldest LOVES tacos--so this dish pleases them both. It is like tacos in a pasta form. You can adjust how spicy it is with the type of enchilada sauce and salsa you choose to use. Perfect dinner for a busy night!

1 package (25oz) frozen beef ravioli

1 can (10 oz) enchilada sauce

1 jar (8oz) salsa

2 cups shredded Cheddar-Monterey Jack cheese

1 can (2oz) sliced black olives drained (optional)

sour cream and lettuce for garnish

Cook ravioli according to package directions. Meanwhile, in a large skillet combine enchilada sauce and salsa. Cook and stir over medium heat until heated through. Drain ravioli, add to sauce and gently stir to coat. Top with cheese (and olives, if desired). Cover and cook over low heat for 3-4 minutes or until cheese is melted. Bring to the table and enjoy with lettuce and sour cream. Apporx. 6 servings

  9. On a busy night, I like to make smothered burritos. I just brown ground beef, put in some taco seasoning, and add a can of refried beans. Meanwhile, I heat up a can of red enchilada sauce. Then everyone can fill a burrito with the meat mixture and pour some sauce over. Top with diced tomatoes, lettuce, olives, cheese, sour cream, whatever you like. :) It looks impressive for very little work.

    I love coming home to a meal that's been cooking all day in the crock pot, like Thai Chicken (http://lindstewfoodies.blogspot.com/2010/02/thai-chicken-in-crock-pot.html). With some minute brown rice and a quick veggie side, you've got a great meal in 15 minutes!

  16. Well if I'm really busy my favorite meal would be delivered pizza since I have to do zero work on it. But I'm sure that doesn't count so I'd have to say quesadillas since they are super quick with the quesadilla maker we got as a wedding gift.

  18. A busy night in the winter - a rotisserie chicken and mashed potatoes from the store deli and a side of peas. Simple and satisfying. In the summer, big salads which grilled chicken and whatever I have in the fridge or the freezer. (I put frozen corn and frozen peas right on top - the thaw in no time.)

  21. Chicken and dumplings. This takes no time if you already have your chicken cooked and your broth reserved. A frozen pizza come in second. Just stick it in the oven and help the kids with homework while it cooks! Teresa

  36. Oh boy could I use this book! On those nights when nothing seems to be coming together, we usually resort to frozen junk out of the freezer - pizza, chicken nuggets... not so healthy things. I know this book would be so helpful, then my freezer would be full of yummy AND healthy food!

  39. On a busy night we make cheddar meatloaves. They are my husbands favorite he requests them at least 2 times a week. It takes 5 minutes to mix them up add the sauce and put them in the oven. Best with Baked potato and corn! Yum Yum!

  40. On a busy night I make tortellini sausage soup. It only has about 5 ingredients and my kids and hubby love it! No one ever feels like mom skimped even with this easy meal!

  41. Cold cereal! Of course I don't have any kids and my husband works swing shift...so I can get away with it. :)

    However after making the Honey Lime Enchiladas last week, that may become my "go to" meal. It was easy and delicious!

  67. One of the easiest meals I make is chicken tacos in the crockpot. A few frozen chicken breasts, taco seasoning and a can of rotel tomatoes. Leave on low for four to five hours, use tortillas and toppings and you are done! So good!!

  69. Fried egg and turkey sandwich with honey mustard. I cook an egg over easy, add a slice of cheese on top to melt it and then add a slice of turkey. Serve on toast with some raw spinach and drizzle honey mustard on top. Quick and yummy!

  79. burritos if i have leftover chicken, rice and/or beans. i like to throw it all in a tortilla w/cheese & green chile. Cook it at high temp for 8-10 min. to make it crunchy then top w/ enchilada sauce.

  107. Grilled ham and cheese with soup, spaghetti, or tacos are usually my last minute meals. Or I like to take a small piece of salmon from the freezer and broil it. Add some potatoes cooked in the microwave and salad and you have a nice healthy, quick dinner.

  125. We ALWAYS have taco salad as our fast meal. I home can pinto beans and meat. On a busy night we just open a jar of beans and a jar of meat and do the normal accompaniments of cheese, sour cream, chips, lettuce, salsa.

  140. My fastest meal when we are in a hurry is white spaghetti (cream of chicken, milk, cheese, celery seed) and canned string beans. The kids love it and it is oh so fast. Plus, I always have all the ingredients to make it! Yummy and quick, who can beat that!

  147. My favorite quick meal is soft tacos, I always keep ground beef seasoned with taco seasoning packet in my freezer. I like to use flour tortillas that I butter one side and put in frying pan, melt cheese on top side and then fill with the meat, yum, I could eat these every night!

  175. Ooo, I definitely need a cookbook like this. On a busy night, I have a go to recipe that comes from cans. It's a chili I make with canned beans, canned corn, salsa, canned green chiles, chicken broth, and taco seasoning. We serve it with tortilla chips. Yum!

  177. When I need a quick meal I stop by our favorite pasta joint in St. George, Pasta Factory and buy there pasta sauce in a soup container. They sell it for the same price as soup. Then I make my own noodles at home and have dinner in 10 minutes

  178. I like to make Wraps when I am in a hurry. I LOVE to make a "BLT Wrap" with Ranch Dressing. If I have an Avacodo or Lunch meat I add that too! Add some fresh fruit on the side and its a meal!

  179. On a busy night, when I forget to take meat out to thaw, I like making Omelets. They are quick easy and you can create what you like best! It makes it super easy!

  180. We call busy nights at our house "free for all". The kids love it! They may not grab the vegies when the head to the fridge but for one night it's okay.
