SUPERBOWL SNACKS ~ Ranch Cheeseball

This cheeseball will be a pleaser for any crowd on Superbowl Sunday! It is basic enough (with no "strange" tasting ingredients) and yet has a delicious, creamy, cheesy taste, that even the pickiest person loves! I know my family loves it... and everyone else that has tried it. I bet every one of you has at least tasted a ranch cheeseball. They are super easy to make but a classic favorite. Make it the day ahead if you have time so that the cheese will really soak up the flavors. Also, if you don't have an almond-hating-husband, you can roll it in sliced almonds instead of sharp cheddar! Have fun watching the Big Game!!




Ranch Cheeseball

1 1/2 (8oz) packages Cream Cheese (I use Neufchatel - 1/3 less fat!)
1 cup finely shredded extra sharp cheddar cheese, lightly packed - plus more for rolling ball
2 Tb green onion, white and green parts minced
1/2 envelope of dry Ranch Dressing mix

Stir everything together until well combined. (Kitchen Aid with paddle attachment works great.) Using a rubber spatula, scrape cheese mixture into a rough ball (it's too sticky to make pretty yet). Grate more extra sharp cheddar cheese and arrange in layer on counter. Dump cheese ball onto shredded cheese and roll around until well coated. At this point you can form it into a nice, round ball. Wrap in plastic wrap and place in frig until ready to eat. Serve with crackers and fruit.
