These sandwiches are one of my all-time favorites! They are easy to make and are festive and colorful. They taste even better than they look and are a hit at get-togethers!
South of the Border Sandwiches

1 loaf French bread, cut into 1" thick slices
½ cup olives, chopped
½ teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon salt
½ cup lite mayo
1/3 cup nonfat sour cream
1/3 cup green onions, chopped
¾ to 1 lb. turkey, thinly sliced
2 medium tomatoes, thinly sliced
2 ripe avocados, sliced
¾ cup cheddar cheese, shredded
¾ cup pepper jack or Monterey Jack cheese, shredded
Directions:
In a bowl, combine olives, chili powder, cumin, and salt; set aside 2 T. of this mixture. Add the mayo, sour cream, and green onions to the remaining olive mixture. Place bread on an ungreased baking sheet and spread 1 T. of the mayo mixture on each slice. Top w/slices of turkey and tomatoes. Spread w/another T. of mayo mixture. Top W/ avocados and cheeses. Sprinkle w/the reserved 2 T. of olive mixture. Bake @ 350 for 15 min. Makes 8-10 serv.

ReplyDeleteYum, I have heard so much about these - I'm serious. I've been meaning to ask you for the recipe. I am excited to try them out. One question - when you say french bread "sliced" does that mean sliced down the middle lengthwise to make one big long sandwich, and then to serve it you slice it? It sounded like that from the directions...
ReplyDeleteNo, you cut the french bread in about 1" slices widthwise (is that a word:) and make a bunch of individual sandwiches before you cook it. By the way, I have also used whole wheat (I think it was french) bread from Costco and I thought it was just as good.

ReplyDeleteOkay, Amy, this was absolutely DELISH. I took a picture of it when I made it for my fam tonight (like we talked about :)), and posted a picture with your recipe. I am totally going to make these the next time I have friends over for lunch. So yummy! PS- I really liked the pepper jack cheese with it.
