Cowboys Cookies

2 cups old-fashioned rolled oats
2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1 cup (2 sticks) butter, softened
1 cup packed brown sugar
2/3 cup sugar
2 eggs, at room temperature
1 tsp vanilla
2 cups semi sweet chocolate chips ( I like chunks)
1 cup chopped pecans or shredded coconut(opt.)
1 In a large bowl stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.
2 In the bowl of your mixer blend the butter and sugars until smooth, ab0ut 2 minutes. Add the eggs and continue to beat until fluffy, about 1 1/2 minutes. Blend in vanilla
3 Using a wooden spoon, stir in dry mixture, half at a time. MIx in chocolate chips and nuts. Refrigerate dough for at least 1-2 hours.
4Heat oven to 350. Line baking sheet with parchment paper.
5 Using a scant 1/4 cup per cookie shape dough into balls and slightly flatten. Place about 2 inches apart
6 Bake for 12-14 minutes. Let cool on pan for 5 minutes and then transfer to wire rack to cool completly.
**To change it up--**
Omit the chocolate chips,cinnamon and nuts and add:
2 cup white chocolate chips
1 cup dried sweetened cranberries

ReplyDeleteWe are glad you found our little blog and like the recipes! The easiest way to print recipes from blogs is to hi-light what you want and then go to file and click on the print option. Then the print option box comes up and click on print selection only. It should only print your recipe and not the entire blog! Does that make sense??Hope that helps!!

My recipe for chocolate chip oatmeal cookies was terrible -- so dry -- and these were so moist and perfect. I also made the breadsticks that Melanie posted. They too were fabulous! Can't wait to try more!

ReplyDeleteI made these tonight and they were great. I love the chewy oatmeal. The dough was delish, too. :) I used chips instead of chunks and it ended up being too chocolatey (maybe more chips fit in a cup than chunks). I think I'll cut the chocolate in half next time, so I can enjoy the chewy coconut & oatmeal part better. :) I'm giving them to Jed to give to the YM after his lesson tomorrow at church. Hopefully he'll get lots of participation. :)

I made these cookies and they are now my favorite ones to make. Instead of adding 2C of flour I added 1C flour and 1C wheat flour. I also added walnuts. Yummy! Thanks for the delicious recipes.
