This recipe is so quick and easy! If you love caramel and nuts, you'll love these bars. Eat them immediately after cooking, or cool them in the refrigerator for a nice refreshing treat! I just make these in my kitchen aid and then I use a normal cookie sheet to bake! Enjoy!
Caramel Oatmeal Pecan Bars

2 cups all-purpose flour
2 cups quick or old fashioned oats
1 1/2 cups packed brown sugar
1 tsp. baking soda
1 c. butter, softened
1 1/4 c. caramel ice cream topping
1 c. chopped pecans
Preheat oven to 350˚. Combine flour, oats, brown sugar, and baking soda in large mixing bowl. Cut butter into flour mixture with a pastry blender until mixture resembles coarse crumbs. Reserve 2 cups of the crumb mixture; set aside. Press remaining crumb mixture onto boom of a bar pan (metal cookie sheet with about 1” edges around it or a stone bar pan). Bake 10 minutes. Spoon caramel topping over crust, carefully spreading to edges. Add pecans to reserved crumb mixture; sprinkle over caramel topping. Bake 10-15 minutes or until golden brown and bubbly. Remove to cooling rack. Cool; cut into 40 bars.

ReplyDeleteI made these tonight, Amy, and they were really yummy! I made the serious mistake of not transferring them to a cooling rack and boy did I pay for it! I had to use a long skinny butcher knife to pry those babies off the cookie sheet after they had cooled! Luckily they were worth working up a sweat for. :)
