I made this cake for her birthday...she will probably see it here before I get a chance to bring it over! :) Mel, you are the best big sister and a cherished friend...I love you!!
This cake is delicious and super easy. It's got to be my favorite cake because in addition to being so moist and yummy, it is really pretty. The glaze recipe is the best tasting I've ever tried and looks so shiny and nice. Serve it warm with vanilla bean or peppermint icecream and everyone will be asking for the recipe! If you decide to slice it prior to serving, the glaze looks great drizzled over the icecream on each slice.
Chocolate Mint Bundt Cake

1 Devil's Food cake mix
1 small box instant chocolate fudge pudding mix
4 eggs
1 c milk
3/4 c canola oil
2 tsp peppermint extract
1 (12 oz.) bag semisweet chocolate chips
Mix together all ingredients (except choc chips) until combined. Stir in chocolate chips. Pour into greased bundt cake pan and bake for 40 minutes at 375 degrees. (Since the cake is too deep for a toothpick test, I use a long, thin knife to check for doneness.) Try not to overbake or it won't be as moist.
Chocolate Glaze
1/2 c semisweet chocolate chips
2 Tb butter
2 Tb corn syrup
1 to 2 tsp hot water
Heat chocolate chips, butter and corn syrup in small saucepan over low heat, stirring constantly, until chocolate chips are melted; cool slightly. Stir in hot water, 1 tsp at a time, until consistency of thick syrup.

ReplyDeleteI've made this before and can attest to its yumminess! For some reason, I made it without the chocolate glaze and that just makes it look even better. I'll have to try it again!
