I got the recipe from my friend, Brenda, years ago. I've made these for many a last-minute potluck. (It works great to double it, in which case you get 3 dozen muffins.)
Whole Wheat Muffins

½ c. oil
1 egg
½ tsp salt
1 c. brown sugar
1 c. milk
½ tsp baking soda
1 tsp vanilla
2 c. whole wheat flour (I use freshly ground wheat flour)
Mix oil, egg, salt, sugar, milk, soda, and vanilla. Pour into a bowl containing flour and mix well with spoon. (I add all ingredients to my Bosch and mix.) Fill greased muffin tins 2/3 full. Bake at 350° for 15-20 minutes (check a few minutes early). Makes 1 ½ dozen.
So are these muffins sweet or more savory to serve alongside a main dish?? They look great!
ReplyDeleteThey are actually really sweet. I usually call them Brown Sugar Muffins. Maybe I should officially change the name.... (In fact, I think I'll add a note about that to the recipe...)

ReplyDeleteI actually have a brown sugar muffin recipe from my mom that I love. I need to post about them one of these days! These sound equally delicious - I'll have to compare the recipes! (although I know yours is healthier because mine doesn't have whole wheat flour...)
ReplyDeleteI made these last night and they were really good! I've made "Brown Sugar Muffins" before and didn't like them but this recipe was great. I didn't pack the brown sugar though - I was trying to be slightly more healthy! :)
