Rhubarb Muffins


Our cousin Mindy Halladay shared this recipe with me. I actually have a very prolific rhubarb plant (planted by the previous owner), so I am always looking for ways to use it. Mindy had told me when I was recently up in Canada for a visit, that she had a great rhubarb recipe. I was very happy when I received the email, and even happier when they turned out so delicious! These are really really good! Thank you Mindy!!

Rhubarb Muffins

1/2 cup butter

1 1/2 cups thinly chopped rhubarb

1 1/2 cups brown sugar

2 cups flour

1 egg

1/2 tsp baking soda

1 cup sour milk ( I used buttermilk)

1/2 tsp salt

1 tsp vanilla

Cream butter and sugar together. Beat in egg. Add the rest of ingredients and stir until just moist. Divide into muffin cups.

Sprinkle with:

1/4 cup brown sugar

1 tsp cinnamon

Bake @ 350 F for 30 -35 minutes.

  1. Mmmm... I love rhubarb. Do you still taste the tartness of the rhubarb or are they really sweet?

  3. Hi Melanie this is Janet Henrie's daughter Keri and I love reading your blog! I was just wondering about your rhubarb does it all have to be red? Alot of rhubarb I've seen is mostly green? And I am just assusming that it's not ripe.
