Creamy Artichoke Chicken



This is a great recipe for anyone who likes artichokes and mushrooms... personally, I love both. And the sauce is creamy delicious. I meant to serve it over rice, but when I went to retrieve some from the pantry... I was out! Oh, well. It was wonderful anyway. I actually froze half of the recipe in a pyrex dish and the pictures are from the frozen portion - it turned out great!

Creamy Artichoke Chicken

4 boneless chicken breasts

1 can chicken broth

1/2lb fresh mushrooms, sliced

2 T butter

1/8 tsp pepper

1/4 tsp salt

1/4 c flour

1/4 c butter

1/2 tsp ground rosemary

2 T cooking sherry (the recipe says you can substitue apple juice)

1 (14oz) can marinated artichoke hearts

1/2 c parmesan cheese

3/4 c half and half

Saute mushrooms in 2 tablespoons butter until golden brown. Set aside. Slice chicken breasts in two. Simmer in chicken broth for 20 minutes. Remove from broth, reserving 3/4 cup broth. Arrange chicken in a large casserole dish. Top with artichokes and mushroom; set aside. melt 1/4 cup butter and stir in flour, salt, pepper, broth and half and half. Cook until thick. blend in cheese, cooking sherry and rosemary. Pour over chicken. Cover and bake at 325 for 30 minutes.

  3. I love this dish. It was published in the Junior League Cookbook and several others that have been around for years - it's one of Pam Holt's family favorites. It is one of those that everyone loves. Yours looks great! YOu better watch out, Mind. No one is going to believe that cooking isn't your talent!

  5. Mindy! I made this dish 2 nights ago! It is AMAZING! SINFULLY GOOD! The only thing I did different was I added about 1 tablespoon of the marinade from the artichoke hearts to the sauce. Also, I served it with mashed red potatoes (skins on!- TX style!) with a side of asparagus. It was sooooo good! Thanks for posting this!

  9. This is one of my favorite meals! I am wanting to make it for the next time I have guests over for dinner. I am wondering if you thought this recipe would work cooked in the crock pot instead? I am not a big fan of simmering chicken and I also like how tender chicken is when cooked in the crock pot. Let me know what you think! Thanks:)
