Grandma's Zucchini Bread



This is the recipe that my Mom always made growing up, and I have to say... I LOVE IT! She got the recipe from her mom, so it has been a family favorite for awhile. I love the addition of nutmeg, allspice, and cloves to the cinnamon that is found in most recipes. Plus this recipe has the best crust! It is stays together great, but the crust has an almost crumbly texture in your mouth. And the center remains soft and delicious. You'll just have to try it! My husband and I have already made it three times...

Zucchini Bread

3 cups flour
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
1 cup vegetable oil (or applesauce)
2 cups sugar
2 eggs
2 cups grated zucchini
2 tsp vanilla
1 cup raisins (I don't like raisins, so I left them out)
1 cup walnuts (yet another thing I prefer to leave out)

Combine flour, soda, salt, baking powder and spices; sift, then set aside. Beat oil, sugar and eggs until light and fluffy. Then add zucchini, vanilla, flour mixture, raisins and walnuts. Bake at 350 for 50 minutes. Makes 2 medium loaves.

  1. your recipe for " Grandma's Zucchini Bread " looks delicious!! however in your list of ingredients, I believe that you have ommited the sugar measurement. you refer to adding the sugar in your preparation instruction so I know that the recipe is supposed to have sugar, but how much?? Could ypu possible update the recipe and include the sugar measurement, please? Thank You! Carolynn Scoffield

  7. This bread really is good! I made it with whole wheat flour and oat groat flour, and substituted the oil with applesauce. It was very moist! I also doubled the nuts. I do have a question: I'd like to decrease the amount of sugar, but I'm not sure how. Hubby is borderline diabetic and I'm trying to make healthy snacks for him. What would be a good healthy substitute, and/or how much can I decrease the sugar?

    I know it is 5 months later, but I was looking at this recipe and I realized your question never got answered. I am not sure how that happened! But to answer your question, I have cut the sugar down to 1.5 cups and the bread still turned out awesome. I haven't experimented more than that. Hope that helps!
