Applesauce Pancakes

Generally, I am not a pancake fan... but these ones are delicious! They are really moist and sweet even though there is only one tablespoon of sugar.  I like them with butter and warm applesauce with a little drizzle of maple syrup.  Mom used to make these pancakes for us growing up... talk about fantastic comfort food!



Applesauce Pancakes

1 egg, slightly beaten

3/4 c natural applesauce (no sugar added)

1/2 c milk

2 Tb canola oil

1 c flour

1/4 tsp cinnamon

1 Tb sugar

1 Tb baking powder

1/2 tsp salt

chopped pecans or walnuts

Combine all ingredients until moistened. Cook over medium heat. Sprinkle chopped nuts over batter before you turn pancake. Serve with warmed applesauce and/or maple syrup... enjoy!
