Martha Stewart's Banana Bread

I know everyone has their own banana bread recipe... there has to be a million out there. Since I've tried that many recipes (okay, maybe just a dozen or so) I can definitely say that this one is the best I have ever baked or eaten! It is just delicious! Erin introduced this recipe to me and I am so thankful... I never need to try another one unless I really want to! So even if you are sick of trying new banana bread recipes, you have got to give this one a chance!


Martha Stewart's Banana Bread

1/2 c butter (1 stick), at room temperature
1 c sugar
2 large eggs
1 1/2 c flour
1 tsp baking soda
1 tsp salt
1 c very ripe bananas, mashed (~3 bananas)
1/2 c sour cream
1 tsp vanilla extract
1/2 c chopped pecans or walnuts (optional)

Preheat oven to 350 degrees. Butter 9x5x3 inch loaf pan; set aside. (Unless you have a Demarle loaf pan, in which no greasing is necessary... that is definitely on my Christmas list this year!) With an electric mixer, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate. In a medium bowl, whisk together flour, baking soda and salt. Add to butter mixture and mix until just combined. Add mashed bananas, sour cream and vanilla; mix to combine. Stir in nuts (if desired) and pour into pan. Bake until cake tester inserted into center of loaf comes out clean, about 1 hour. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

*the original recipe said 1 hour 10 minutes but I overbaked mine so many times that I finally just changed it to 1 hour. It's better to check on it early than too late!

  1. Erin gave me this recipe, too, but I hadn't tried it yet. I have some old bananas, though... so maybe I will try it this weekend. It is always a battle between banana bread and Amy's banana bars. I love them both so much. :)

  2. I'm glad you like this as much as I do, Britt! It's soooooo good! :) I like how the sugar makes it kind of crystallized tasting... hard to explain, but it's so moist and sweet and delicious.....

    I actually just wanted to tell Melanie that her Yummy Whole Wheat Bread is the best recipe I have ever made. I love it. It has just the right flavor.

  7. I use a similar recipe and it is FANTASTIC! But, instead of just greasing your pan...after you grease it, coat it with a cinnamon/sugar mixture. It makes the crust scrumptious! Thanks for your blog...I check in every day or two and have used a recipe almost every week since I found you guys! ;)

  8. How easy is it to add things like chocolate chips or various other fruit/dried fruit? Just sub them in instead of the nuts? THANKS, looking forward to trying this one out!

  9. I tried this recipe a couple of weeks ago and I thought it was quite bland to be honest. I know that it was a recipe from Martha Stewart, but I have to say that considering that she has been a cook for many years, I expected it to taste better. This was the third recipe I've tried from this site. I've tried the lemon loaf, the recipe for blueberry lemon muffins, (which were to die for), and the banana bread recipe. I loved the blueberry muffins, but I didn't think the other two turned out well. Love the blog though. I tried a recipe for old-fashioned banana bread from another food blogger and she added cinnamon to her banana bread, which made it taste so much better.

  10. Hey S, so sorry I didn't turn out! I used this recipe for years and always loved it for a plain banana bread recipe. One of my sisters never liked it at all tho! It might just be personal preference. However I have to say I haven't made it for a long time because I found a diff recipe that I love way more. The choc swirl banana bread. I've posted it on here too and it is wonderful! Its even "healthy". Or should I say, healthier! We have other versions of banana bread here too that r super good- I hope u find one u love! Btw, so glad u loved the blueberry muffins- they really r to die for! :)

  11. Thanks for understanding Britt and I appreciate your response. I'll have to try the choco swirl banana, mmm, that sounds good. I love chocolate and I have a daughter who just so happens to have my sweet tooth so she'll love it, too. Keep up the good work and I love this blog.

  12. I make this all the time now and I love it, it is always moist and delicious. In case anyone is interested, I recently started making it with whole wheat flour instead of white and it is just as moist. I also tried buttermilk once instead of sour cream and it turned out great. Thanks for the great recipe, I had been looking for a good one.

  14. I have been making Martha's Banana Bread for years! I've made this recipe so often the section of my cook book is completely detached and covered in batter...I'm not always the most successful with a mixer which is why I now make it in a food processor! This recipe is always a hit. I always throw bananas in the freezer when they're starting to turn so I always have some available.
