Oatmeal Spice Cake with Browned Butter Frosting

I am NOT a fan of frosting. In fact I usually just scrape it off before digging into a piece of cake. However......this frosting is to die for!! I'm not kidding around. It goes perfect with the oats and cinnamon in the cake. Make sure you really let that butter brown - it makes the cake! haha!! ENJOY!

Oatmeal Spice Cake with Browned Butter Frosting

1 1/2 c flour

1 c quick-cooking oats

1 c packed brown sugar
1/2 c granulated sugar

1 1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/2 tsp ground nutmeg

1/2 c shortening

1 c water

2 eggs

2 Tb molasses

Heat oven to 350 degrees. Grease 9 x 13 inch pan with shortening; lightly flour. Beat all ingredients with electric mixer in large bowl 30 seconds on low speed, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour into pan. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Prepare Browned Butter Frosting; spread on cooled cake.

Browned Butter Frosting

1/3 cup butter

3 cups powdered sugar

1 1/2 tsp vanilla

2+ Tb milk

Heat butter over medium heat until delicate brown. Mix in powdered sugar. Beat in vanilla and enough milk until smooth and spreadable. (For me it takes at least 3 tablespoons of milk - just make sure you add enough milk to make it soft and smooth. If the frosting is too thick, it will tear the cake and not look pretty!)

  7. Hey Scottie and Kristie (don't know which of you posted the comment!), I hate to use shortening too! However, I know shortening vs butter can make a big difference to a recipe....so try it and let me know how it works! Unfortunately I have never substituted it in this recipe so I don't know how it will work out - sorry!

Hey, I just stumbled across your blog searching for new recipes that I could try out.. and looks like I found a jackpot :) Are all the recipes for a certain amount of people, cause some of them look quite large? There is only 2 of us, so I usually half all the recipes, but I am not sure how big these ones are...?
    (well not this particular one.. I am sure the two of us wouldn't have a problem eating all that cake all by ourselves ;))

  11. Hi Sanni, I'm so glad you found us! I think most of the recipes are for about 4 people - some are more though. There are only 2 of us at my house but we love leftovers OR I will freeze half to use on a day I'm busy! Good ones to freeze are enchiladas, pasta shells,(both of which I will freeze half prior to cooking) and soups. Some of the salads I would for sure half though! Brittany

  13. Thanks for this awesome frosting recipe! I made a banana cake this weekend and used the Brown Butter Frosting on it. Wow! It was delicious! I'm not usually one to eat the frosting by itself (I leave that to my kids), but this one had me trying to find extra bits of frosting on the pan when the cake was gone! I bet this frosting would be awesome on any banana, spice, pumpkin, or carrot cake.

  14. I made a regular chocolate cake and put the browned butter on top. It was pretty good and a nice change from the chocolate frosting I usually use.

  15. Oh my goodness! For my father's 71st birthday he requested that I make an Oatmeal Spice Cake for him. After a test run with my mother's recipe, I decided on this one instead. The Browned Butter Frosting was SO easy to make! I will definately be making this one again!

    Note: I used two 8 inch round pans instead of a 9x13 but used the same bake times and spread a thin layer of frosting on the bottom of the cake dish then layered the cakes as usual with a layer between the two cakes and a layer on top. I left the sides unfrosted. It's SO pretty!
