These muffins are moist, and pleasantly dense. I love the combination of bananas and chocolate, reminds me of a banana split! My children gobbled them up! So good and good for them with all that whole wheat flour! Yum!!
Whole Wheat Banana Chocolate Chip Muffins

1/2 cup butter (1 stick or 4 ounces)
1/2 cup packed light or dark brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract
1 1/2 cups mashed ripe banana (about 3 bananas)
1/4 cup honey
2 large eggs
2 cups whole wheat flour
2/3 Cups chocolate chips
Preheat the oven to 350. Line or grease a 12 cup muffin pan. I used my Demarle mini muffin pan.
Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and chocolate chips, stirring until smooth. Divide batter into the muffin cups, they'll be nearly full. Bake the muffins until a cake tester inserted in the center of one comes out clean, 23-28 minutes. Remove from oven and after a couple of minutes transfer the muffins to a rack to cool.
Yum! These sound great. Banana and chocolate can never be a bad combination.

ReplyDeleteI made these muffins the other day. I may have added too much nutmeg- the spices were a little off for my taste. I was expecting more of a banana bread taste, but these taste different. Not bad, but just different from what I had expected. Like using whole wheat flour!

Thanks for the great recipe. I made these with five minutes of finding your blog. I sub in 1/2 cup of white flour to lighten them up slightly. My toddler loves them, too!
ReplyDeleteI love them! This is my first ever baking for the muffins. I used 1 cup of white flour because I wasn't sure if I would like the whole wheat flour.I substituted 1/4 cup of apple sauce for 1/4 cup of butter. I also used just 1/4 cup of white sugar instead of 1/2 cup of brown sugar and I didn't use honey. They turned out great. I love them so much. Thanks for the great recipe!!! ;)
ReplyDeleteThe best "healthy" muffin recipe I ever made. Definately a keeper. Thanks for posting it. I was able to google bananas, chocolate chips and whole wheat flour to find this perfect recipe. I added 1/4 skim milk because the batter seemed a bit thick. Perfect texture. YUM
ReplyDeleteWe are moving from Colorado to Maryland with the military in a few weeks and I found this recipe trying to use up whole wheat flour and brown bananas! I also added some chopped walnuts with the chocolate chips, YUM! (And it even worked with the weird high altitude that I'm not used to messing with!)
