
This is deliciously hearty and tasty. Perfect for a cold winter night... or a thunderstorm, in this case, which will be hitting Detroit tomorrow! No, soup season is not quite over yet! :)
Anyway, it's yummy and super duper easy. I just love tasty crockpot meals. Thanks goes to my cute mother-in-law for this recipe.
Michel's Crockpot Beef Stew

1 can minestrone soup
1 can tomato soup
1 can water
1 - 1 1/2 lb stew meat
3-4 carrots, peeled and thickly sliced
1 large onion, chopped
3-4 potatoes, peeled and cut into large chunks
Combine all ingredients in a crockpot. Cook on low 8-10 hours or high 4-5 hours. Salt and pepper to taste.

ReplyDeleteI absolutely love beef stew and I always make it in the crockpot. I put the roast in the crocpot with onions, garlic, beef broth and tomatoes. I let it go all day and when it's almost time to eat I roast carrots and potatoes in the oven and add to the crockpot. It's delicious!!

ReplyDeleteHey Tammy, the only minestrone soup brand I have at my grocery store is Campbells. But I'm sure any brand would be fine. Oh, and the tomato soup can be any generic brand. Hope you like it! :)
ReplyDeleteI have made this several times for my small family (of 5). But I need to make a meal for a family of 7, all boys! Do you think I can double it and have enough for all 7 of them?
ReplyDeleteHi Jodi! I'm glad that you've been enjoying this recipe. I think if you doubled this recipe (round up on the amounts - 3 lbs meat, 8 potatoes, 8 carrots) it would probably be enough for the boys - be sure to serve it with some hearty warm bread or something like that to round out the meal. There are so many bread ideas on this site - such as the French Bread, Grandmas White Bread, Artisan Bread, or biscuits or rolls. I guess it depends on how old these boys are, but I think you would be safe. And if you are making a dessert to go along with it, that would help fill them up too. :) Good luck!
