Anyway, they are very easy and the cream cheese frosting is completely optional. This time I made these for a treat for my family, so I didn't add the frosting since they are very yummy without it. But if I was making these for a special baby shower or brunch or something, I would pipe the frosting on the tops just like Katie did. They were very pretty.
Black Bottom Cupcakes

8 oz cream cheese
1 egg
1/3 c. sugar
1/8 tsp salt
1 (6-oz) pkg semisweet chocolate chips (I HIGHLY RECOMMEND Mini Chocolate Chips. They are PERFECT!)
1 ½ c. sifted flour
1 c. sugar
1 tsp soda
¼ c. cocoa
½ tsp salt
1 c. water
1/3 c. oil
1 T. vinegar
1 tsp vanilla
Beat cream cheese, egg, sugar and salt in a bowl. Stir in chocolate chips (mini sized is best!). Set aside. Beat all remaining ingredients until blended. Fill cupcakes liners 1/3 full. (Yes, that's right - use cupcake liners! With the rich centers they are likely to fall apart after baking if you try to extract them from the tin without liners.) Top each with a heaping spoonful of cream cheese mixture. Bake at 350 for 25 to 30 minutes. Makes 1 ½ dozen.
Cream Cheese Frosting
4 oz cream cheese
3 T. softened butter
1 tsp vanilla
1 ¼ to 1 ½ c. powdered sugar
Beat together, adding milk and more powdered sugar to desired consistency and quantity. (There's a chance you may need to double this if you are piping the frosting.)

ReplyDeleteMy mom used to make these when I was a kid for very special occasions. She used a chocolate ganache instead of cream cheese frosting. I agree - mini chocolate chips are best. I also like coconut inside. They are to die for! I make them only once a year or so, but they are always a hit!

ReplyDeleteWell I will have to see how they turned out since I mixed everything all together. I was following the directions, but I got confused when it said to said the first part aside as I read further it did not say what you were supposed to do with that so I thought it must be mixed together. But after I mixed it all I realized I made a mistake, oh well. I hope it still tastes good.
ReplyDeleteOh, Samantha! I'm sorry you got confused! You are supposed to beat the cream cheese together with the egg, sugar, salt and chocolate chips and then set it aside. You then proceed to make the batter and fill the muffin cups with the batter. THEN you put a heaping spoonful of the cream cheese mixture into the middle of the batter in each muffin cup. THEN you cook it.

Erin - we tried this today, but I didn't have cupcake liners, so I made it as a cake, and it was SO good! And it's so cool that you know Katie! She's one of my BFF. =)
