Favorite Minestrone


I love a good minestrone, and have been playing around with recipes to find the perfect one. This is my favorite so far. Who knows I may tweak it even more next time. If I do and it is even better I will let you know, of course! But for now this is my go-to recipe for Minestrone soup. My family loved it! This dinner really hit the spot!

Favorite Minestrone

2 tablespoons olive oil
3 potatoes, peeled and cubed
5 carrots, chopped
4 stalks celery leaves and all, chopped
1 sweet onion, chopped
4 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans, drained and rinsed

1 can petite diced italian tomatoes
2 (14 ounce) can chicken broth
4 cups water
a couple of handfuls of chopped fresh spinach leaves

2 tablespoons chopped fresh basil
1 tablespoons chopped fresh oregano
1 tablespoon salt
2 cups cooked shell pasta
DIRECTIONS
Heat olive oil in a large pot over medium heat. Stir potatoes, carrots, celery, onion and garlic into pot. Mix in tomato paste, beans, tomatoes, broth and water. Season with basil, oregano and salt. Cook and stir 30-40 minutes, or until vegetables are tender.


Add the chopped spinach the last 5 minutes.
Cook shell pasta in a seperate pot until al dente. Stir pasta into soup. Serve with a generous sprinkle of fresh parmesan! Yum!

There is nothing more like a warm bowl of hearty soup on a chilly fall evening!

  4. Yum! I have never made minestrone - don't know why. But I have had yours and it is so good! I can't wait to try it - it is definitely soup weather here in rainy Seattle!

    I have a question. What is the easiest way to print out your recipes? I feel like I am making it harder than it has to be.

    I am so happy that you enjoy our little blog! I think the easiest way to print the recipes is to hi-lite the recipe with your mouse--and then right click print--but when the print box comes up be sure to click on selection in the page range section--so the whole blog won't start printing, only the hi lited part. Another way to print a recipe is to hi lite it with your mouse and then right click with your mouse and choose copy. Then open a new blank document and right click again and choose paste. Then you can do the same thing with the picture of the recipe you want, change the font or size etc., and then print your document out. Does that make sense? I hope so!   14. Have you ever cooked the pasta in the soup instead of separately? Just wondering how much I should increase the liquid if I try that.

  15. Found this recipe the other day and actually made it tonight. So delicious! My 1-year old even loved it (and made me a Happy Mommy because he ate all of his vegetables).
