Peanut Butter Bars with Fudge Frosting

This is a family favorite. If you are in the mood for something SWEET then these are for you! My oldest son Connor whipped up a batch last Sunday. It is so great to have a budding cook in the house. He only makes treats right now, but I can see potential! I have an idea of giving each of my boys a weekly night to be in charge of helping me prepare, serve and clean up dinner. I think being proficient in the kitchen will be a great skill in future years . Plus it will be fun for me to have a little one-on-one time with my boys and I think their wives will appreciate those skills someday!



Peanut Butter Bars

3/4 C butter

3/4 C sugar

3/4 C brown sugar
3/4 peanut butter

2 eggs

1/2 tsp vanilla

3/4 tsp soda

1/2 tsp salt

1 1/2 C flour

1 1/2 C oats

Cream together the butter and sugars. Add peanut butter, eggs, and vanilla and beat until smooth. Add dry ingredients and mix the oats until firm dough is made. Press batter into a jelly roll pan (a little smaller than a standard cookie sheet--I use the pampered chef stoneware bar sheet) Bake at 325 for 12 -15 minutes, depending on your oven. Do not over bake! The bars should be BARELY golden. If you over cook them they are dry and not very good, in my opinion. Allow to cool while you make your frosting.

 
Chocolate Fudge Frosting

(this recipe is from my fried Jill-it is awesome!)

1 cup sugar

5 Tablespoons butter

1/3 cup milk

1 cup semisweet chocolate chips

3/4 cup mini marshmallows

 
Place the sugar, butter and milk in the small saucepan over medium-low heat and cook stirring constantly, until the mixture come s to a boil. Boil stirring constantly for 1 minute. Remove the pan from heat, add the chocolate chips and stir until melted, then add the marshmallows and stir until melted. Spread onto mostly cool bars.

  5. Oh yum! I want Connor to come stay at our house and make treats every day! :) That is such a great idea to have each son take a day to help you with dinner. I know I would have really appreciated it if Eric could cook at all!! And it will be a good experience for you both, like you said the one on one time.

  7. We tried these today and they are SO good. Very addicting. I used whole wheat flour and my kids couldn't even tell! Oh - I didn't know when to spread the frosting (while the bars were warm or cool), so I waited until they were cool, and they turned out great.

  14. Those sound heavenly! And I think it is absolutely adorable that he made them! What a great mom you are. My husband comes from a family of all boys and I am forever grateful that his mom always put them to work as if they were girls. It has made for one amazing hubby who always helps around the house and loves to cook, too!

I just discovered this site yesterday and I've having a grand ol' time "springing it" on Spring Pad. If you've never heard of Spring Pad, please Google it. It's a wonderful way to clip and store recipes in one place! It even gives a link back to the original source or share them with friends! Love it! I don't know how it's done, but I've seen a few sites where there is a little Spring Pad icon (similar to a Facebook icon to share a post). That would definitely come in handy on this site for those of us that like to copy and print the recipes! Just a thought! Thanks again for a wonderful site! Your mother must be so proud of all of you!
