not your average meatloaf

I'm not much of a meatloaf fan, I'll be honest. And you know why? Nine times out of ten they are absolutely awful tasting! Am I right or what?! But for some reason, when I read this recipe I decided to give it a shot and with a little tweaking it turned out pretty darn tasty! This is no rubbery, tough, tasteless loaf of ground beef... this recipe has great flavor, is very moist, and about as low fat as you can get with a meat loaf. I really liked it - and that is saying a lot! And since it makes two meatloaves, you have another frozen dinner in the freezer for a crazy night. So if you are like me and don't fancy yourself a meat loaf fan but you have those people in your life that crave the occasional manly loaf of meat, try out this recipe. It will satisfy everyone! (And the sweet saucy topping doesn't hurt!) Tasty Meatloaf

1.5 lbs. lean ground beef

1.5 lbs. ground turkey

1 large onion, chopped finely

1 (8 oz.) box stuffing mix (any kind)

1 (8 oz.) can tomato sauce

2 Tb Worcestershire sauce

1/4 tsp pepper

1 cup fat free or light sour cream

1/2 cup milk

1 packet of dry ranch dressing mix

2 cloves garlic, minced

1 tsp oregano

1 egg

Sauce

Stir together in a bowl:

2/3 cup ketchup

1/2 cup brown sugar

1 1/2 tsp prepared mustard

Combine all ingredients in a mixer (Kitchen Aid with paddle attachment works great). Divide into two 9 inch loaf pans. Do not cover. Bake in a preheated oven at 350 degrees for one hour. Remove loaves and drain any accumulated grease in pans. Top with sauce and bake an additional 30 minutes. Once it has mostly cooled you can wrap tin foil over the top of one and put it in the freezer for later. (Use a disposable tin loaf pan so you don't have to monopolize one of your own loaf pans while it's frozen!)

  2. Hey amy, I love ground turkey and hardly ever buy ground beef anymore! You can get it super cheap at costco - cheaper than ground beef by far! Let me know if you like it. Give all your boys a kiss from me! :) love, britt

  4. I made this last night and my kids, my husband and I LOVED it. great recipe....i made it a bit more kid friendly and didn't put in the onions!

  5. What kind of stuffing mix--does it matter? Chicken Stuffing? And do you freeze it before or after cooking? I love the topping--I made a meatloaf a few weeks ago using ground beef and ground pork and put that on top...it was super yummy!

  6. I like to add a little balsamic vinegar to my meatloaf and to the ketchup glaze.. gives it a little zest!

  7. Hi Amy, I used a chicken stuffing mix but I bet any would be good. I want to try a cornbread stuffing mix next time maybe! Also, I bake both meatloaves and then wrap one with tin foil and put it in the freezer. Good luck! Brittany

  8. ^^^Thank you :) On the menu for this week. I bought Chicken Stuffing so we'll see how it turns out. What about reheating since it's already cooked? Do you let it thaw first or put it in at a lower temp and for how long? Sorry for all the questions.

  9. Hi amy, no problem with the question!! I think I let it thaw out enough to where I could get it out of the pan and then i put it in the microwave to warm up. I was in a big hurry that night! I'm sure it would be great warmed up in the oven though too...I don't know how long it would take. If you plan ahead, take it out of the freezer the night before to thaw in the fridge. Then either way it won't take as long to reheat. that would be my suggestion! Hope that helps! Britt

  11. Okay, I finally got around to making this today for dinner--it was sooo good! I used Ground Pork in place of the Turkey, and honestly it was the best tasting meatloaf I've made in a long time! (and easy--using a mixer instead of my hands was wonderful!) My husband thinks he's allergic to onions so I used onion flakes in place of a chopped onion) and it still tasted great. I am actually giving my FIL the second meatloaf for his dinner tomorrow. Thank you for this recipe--I shared it (and your blog) with my friend.

  15. Instead of loaf pans, use the grilling pan that comes with your oven. This allows the drippings to fall away from the meatloaf and it won't fall apart or be soggy on the bottom and sides. You can also put that sauce on the sides too since they are now open.
