Roasted Garlic Cauliflower

This is a fantastic way to eat cauliflower. Honestly, I love it. As you know I have been trying to feed my family a more healthful diet full of whole foods including more vegetables! This recipe is easy and soo delicious! It has become a favorite at our house. I got the recipe from my sister Erin's SAA favorites cookbook. The recipe was submitted by Jill. Roasted Garlic Cauliflower

2 T minced garlic
3 T olive oil
1 lg head cauliflower, washed and seperated into small florets
1/2 cup grated parmesan cheese
salt and pepper to taste
1 T chopped fresh parsley

Preheat oven to 450. Grease or butter a large casserole dish. I use a stoneware baking sheet from Pampered Chef, or a Demarl silpat on a cookie sheet so I don't grease it first. Place olive oil
and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared baking sheet. Bake for 25 minutes, stirring halfway through. Top with parmesan cheese and parsley and broil for 3 minutes. (I usually don't broil, but just stick it back in the oven for a few minutes longer)

    and toss into the food processor for a few minutes and you have faux garlic mashed potatoes!
