This delicious cake must be the best kept secret... at least from me! My friend Stephanie brought some over to me after I had my baby and I fell in love with the first bite! Oh my goodness, it is so moist and chocolaty. The cherries are a subtle flavor that compliment the chocolate perfectly and the frosting is super smooth and fudgy. Oh yum. And it is so easy to make. This may be my new favorite dessert! The thing that shocked me was that there were a million similar recipes for this cake online and once I started asking around, most people had made it before! Obviously it's a favorite... why didn't I know about it?!! So for those of you still in the dark, here it is. Enjoy!
Cherry Chocolate Cake

1 box of devil's food cake mix
1 (21 oz) can cherry pie filling
1 tsp almond extract
2 eggs
Heat oven to 350 degrees. Grease a 9x13 inch pan. In a large bowl, combine dry cake mix, cherry pie filling, eggs, and almond extract. Stir by hand until well blended. (Using an electric mixer will break up the cherries.) Pour batter into prepared pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool.
fudge frosting
1 cup white sugar
5 Tb butter
1/3 cup milk
1 cup semi-sweet chocolate chips
1 cup white sugar
5 Tb butter
1/3 cup milk
1 cup semi-sweet chocolate chips
In a small saucepan, combine sugar, butter, and milk. Boil, stirring constantly, for 2 minutes. Remove from heat and stir in chocolate chips until smooth. Immediately pour over partially cooled cake.
Oh yum! My Dad would LOVE this recipe. I'm going to visit him this weekend. I may just have to make this!

ReplyDeleteThis has been a favorite in our family for many years. My daughter had it for her wedding cake with a fondant frosting on it. Everyone loved it. It is good with just ice cream or cool whip.

This was soooo moist, chocolaty and delicious! And I absolutely love the frosting. The first time I made it, I overcooked it a little and it was a little dry - I was so mad at myself! But I was more careful the next time and it was TO DIE FOR! Thanks for this recipe!! :)
