
Spanish Rice

1-2 T. oil
2 c. white rice
1/2 (8 oz) can tomato sauce
1/2 onion, cut into chunks
3 T. chicken bouillon granules
5 c. water
Heat oil in skillet and fry rice until light brown. Add tomato sauce and stir. Turn heat off. Blend onion, bouillon and water in blender on high until pureed. Add blender mixture to rice, stir well and cover. Bring rice mixture to a boil, over medium-high heat. Once liquid level has dropped below the rice, turn heat down to low and simmer 30-35 minutes. Move rice to see if liquid remains. If so, keep simmering. Once rice is done, you may crack the lid to let steam out and let sit for 10-15 minutes before serving (this helps the rice dry out a little and not be so sticky).

Hi Jen, I am sure this would work great in a rice cooker. Follow the directions in the recipe to the point where it says to cover the rice. At that point use your rice cooker and cook as you normally do for white rice in the rice cooker. Eat well! :)

Hi Neely, uncooked rice will double or even triple in volume when cooked, depending on the variety. (Your bag of rice should say something along the lines of "1 cup uncooked rice will equal 2 cups cooked rice.") So the 2 cups of rice will turn into 4 (or perhaps 6) cups cooked. In other words, this makes a LOT of rice! You could probably assume 1/4 to 1/2 c. serving for each guest, depending on the menu. If you have to prepare for 15 people, I would probably double it, knowing that I would have leftovers. If you have a hunch that it will be closer to 10 people, I would personally not double it, assuming you will have a hearty main course with other sides like salad, guacamole, salsa, chips, etc. Have a great party!
