Creamy Potato Leek Soup

I have never cooked with leeks before but they always looked so unique and fun... so when I saw this recipe I wanted to try it out. Well, for those of you that haven't been introduced to the leek, let me tell you, they are fabulous! My husband (no potato or soup lover) raved about this soup - he loved the flavor of the leeks. The grated sharp cheddar and crumbled bacon on top didn't hurt either! :) This soup is hearty and delicious - and best of all, it is cooked in the crockpot!



Creamy Potato Leek Soup

6 medium potatoes, peeled and diced

2 leeks, washed, sliced, including white and light green parts

1 cup chopped onion

1 carrot, sliced

1 stalk of celery, sliced

4 cups chicken broth

1 Tb dried parsley flakes

1 tsp garlic salt

2 Tb butter

12 oz. can evaporated milk

12 oz. bacon, cooked and crumbled

sharp cheddar cheese, shredded

chives, chopped - optional

Combine everything except last 4 ingredients in crockpot. Cook on low 7-9 hours or on high 3-4 hours. Stir in the can of evaporated milk the last 45 minutes. Serve hot topped with bacon, cheddar, and chives. (If you have a family that loves bacon, like mine, then you might want to stir in the bacon at the end too... otherwise you might run out fast!)

  7. Made this for dinner tonight. We loved it! I tripled the carrots and doubled the celery just because I like them, and then we added a little freshly ground pepper with the bacon and cheese to garnish. SOOO good!

  9. We love leeks. Had this for dinner, it was delish! I blended it with my immersion blender, as I don't really like chunky potato soups, and as a bonus the kids couldn't tell the leeks were in there!

  11. Hi JoLynne, sorry it didn't turn out for you. The only thing I can think of to help is using homemade chicken stock... it makes a huge difference and really gives a delicious flavor to soups. Also making sure you use the toppings... that adds a lot too. But so sorry this recipe didn't hit the spot! Hope you have better luck - and have a great holidays!! Brittany

  12. I just made some of this soup and it was DELICIOUS! I made a few changes for my personal taste. I added extra carrots (6-7 total) and extra celery (3 stalks total) and 8 cups of broth instead of four to make up for the additional veggies. When it was cooked, I took about half of it and pureed it in the blender to give it a creamier consistency then added the evaporated milk and turned it to "warm" on the crock pot. It was so yummy and creamy. It almost tasted like a cheesy soup and no bacon or cheese was needed.

  16. Today is my third time making this in two months! Love this soup! I do things a touch diffeent however...I sauté the veggies in a little EVOO and butter, then add to the crock. Then I cutback on the potatoes a bit and sub in sweet potatoes. I also increase the carrots and celery but that just because I love to add a tonne of veggies to things! Great base which allows users to embellish to their own preferences! Ty!

  17. So its evaporated milk and not regular milk? It just seems like evaporated milk might give it a funny taste, but who am I to say that (I've never cooked w/ evap milk before)just want to double check and make sure. Thanks sounds delicious.
