This QUICK and EASY salad is a great companion to almost any meal, especially when you don't have a lot of time to spare. So pretty much every night:) I love the toasted pecans in it. Yum! Try and eat it immediately as the dressing wilts the spinach overnight. Enjoy this tasty way to get in those veggies:)

I can't wait to make this! My 4 year old is obsessed with spinach right now... weird, I know. She saw a popeye cartoon. :)
ReplyDeleteThis looks yum, Amy! You have made me crave spring and my garden even more, especially right now when it looks like a blizzard outside:(. I hope this year's spinach crop is as good as last year's. Can't wait to try this!
ReplyDeleteMmm... that looks good, Amy! I love simple recipes these days. And I am totally jealous of Tammy. The only way my two year old eats spinach is if I disguise it in a green smoothie! :)
ReplyDeleteMy sister just send me the link to your blog and I can wait to start cooking! Yum!
ReplyDeleteI generally do not post comments on your blog, as I'm an anonymous "follower". However, I just have to let you sisters know that I made an entire meal tonight comprised of all your recipes and it was FANTASTIC. Thanks for all your hard work with this website. I get excited every time I see a new recipe because I know it will be excellent. Keep up the great work and THANK YOU! - Tammy Adams (Arizona)
