One afternoon I was searching online for a fun way to use up a big basket of fresh blueberries. I came across a recipe for these bars that sounded so good that I had to give them a try. I was not dissapointed---they were perfect! Now rumor has it, that these are very similar to the Blueberry Oat Bars at Starbucks. I can't say if it is true, since I have never had them there, but if you have let me know if you agree! One thing I do know, if you are looking for a yummy way to use some blueberries up, these are for you! Mmmm
How is your summer going so far? We are staying busy with sports camps and swim team--and I am now using the full 3 Meals a day Menu Planner . I have posted my completed weekly men planner here. Boys love their food and having a plan is so nice for the Mom, you know:)
Blueberry Crumble Bars

Ingredients
- 1 3/4 cup Quaker Oats, uncooked (quick or old-fashioned)
- 1-1/2 cup all-purpose flour
- 3/4 cup brown sugar, firmly packed
- 1/2 cup chopped nuts (I used walnuts)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter; melted
- 2 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 3 tablespoons water
- 2 tablespoons cornstarch
- 2 teaspoons lemon juice

Darn it...these looked so good...but they didn't turn out for me. I followed the recipe exactly, even though it killed me to use all of that butter...but the crust is so crumbly that ulu can't pick them up and it tastes very dry and like too much flour. Maybe we will have to just scoop the topping and the blueberry fruit and leave the bottom and eat it like cobbler.

ReplyDeleteI had to come back and let you know that I cut these into squares, put them in a Tupperware , and let them sit overnight. This morning, they were easy to pick up and eat , and sooo yummy!! I thnk I tried to eat one when they were still too warm yesterday! Thank you for the recipe!

ReplyDeleteWe made these tonight and they were delicious! They turned out great for us - after they cooled we were able to pick them up, and the crust was chewy and sweet, and it didn't crumble. When I snitched a warm piece, it was delicious too. Yum!

I have a similar recipe with coconut mixed with the oats and walnuts topped with a cream cheese mix thats to die for. Gotta try this one however. Looks equally delicious and not as labor intensive.
