Rhodes Bake-N-Serv company sent each of us sisters a cookbook, Fresh Ideas with Frozen Dough. Wow. It's a great recipe book! I have tried half a dozen recipes from this cookbook already, and have found some real winners. My top recipe so far is this Spinach Twist. It's delicious. I've made it three times already. And honestly, it's pretty simple to make!
Spinach Twist

8 Rhodes Texas rolls, thawed and risen (or 12 regular dinner rolls)
1 8-oz pkg cream cheese
3 c chopped fresh spinach
1/2 tsp basil
1/2 tsp rosemary
1 egg
1/4 c parmesan cheese
2 c chopped ham
1 c sliced fresh mushrooms
1/2 c chopped onion
1 clove garlic, minced
2 tbsp butter
1/4 tsp salt
1/8 tsp pepper
1 egg, beaten
parmesan cheese, if desired
Press rolls together and roll out to a 10x13 inch rectangle. Mix cream cheese, spinach, basil, rosemary, egg, parmesan cheese and ham in bowl. Spread mixture over dough. Saute mushrooms, onion, garlic, butter, salt and pepper. Spread over cream cheese mixture. Starting with the longest side, roll dough up tightly and place seam side down.
Tuck ends under. With a long, serrated knife, cut roll lengthwise in half.
Carefully, roll each half so the cut side is facing out. Twist halves together 3 times and then pinch ends together and tuck under. This will form a long twist. Place on baking sheet sprayed with non-stick cooking spray. Brush with egg and sprinkle with parmesan cheese.
Cover with sprayed plastic wrap and let rise until double. Remove wrap and bake at 350 degrees for 45 minutes. Do not underbake. Cove with foil the last 15 minutes. Let cool for 5 minutes before slicing.

Looks so yummy Erin. I have been wanting to try this recipe. I have spinach in the fridge and Rhodes rolls in the freezer... I think I'll have to put it on the menu this week.

ReplyDeleteAs your recipe collection grows bigger my only frustration is trying to locate recipes quickly. Is there a trick in finding recipes besides scrolling down through the 67 chicken recipes for the one I'm looking for? I have just never been able to quickly locate recipes on this site for the second time. I wish you had a recipe index with the title of the meals under the category. I know you list them under the months but again, a lot of times I don't remember the month and year it was posted.
However, aside from that small complaint, KEEP up the GREAT work! I really enjoy the delicious recipes and I really do appreciate the time and effort you all put into sharing your recipes.

I'm a visual person, I guess, and I need more pics of the rolling/cutting/twisting process. The directions confuse me. Maybe it will make sense when I actually do it, rather than just imagine it?...
ReplyDeleteHi Rebecca! I totally understand. I will try to take some extra pictures of this process the next time I make it. If you try it out before then, maybe it will make more sense as you do it... But I will try to post extra pictures!

ReplyDeleteI agree. We really do need to organize a recipe index on our site. None of us is really very technological, so it has been on our to do list but... well, maybe we just need to find someone to help us! In the mean time, we added a search function in the right column that is actually pretty good. If you remember the gist of the title of the recipe, it should pull it up for you in a smaller list of options. Hope that helps until we figure out a better recipe index!

ReplyDeleteI made this tonight and it was so yummy! Everyone loved it. I let the kids dip it in pizza sauce. Anything that can be dipped is a winner around here. Next time I think I will artichokes.
