Football Whoopie Pies

1 chocolate cake mix
3 eggs
1/2 cup water
1/2 cup vegtable oil
Butter-cream filling
3 cups powdered sugar
1/3 cup butter, softened
1 1/2 tsp vanilla
1-2 TB milk
Preheat oven to 400.
In a mixer, combine cake mix, eggs, water and oil. Whip together for 2-3 minutes.
On a silpat lined baking sheet, spoon batter in rounded mounds. Use the back of the spoon to round out the batter into football shaped ovals.
Bake for 8 minutes. Cool completely.
For the Butter-cream: Mix powdered sugar and butter in mixing bowl Stir in vanilla and milk. Beat until smooth and spreadable.
Scoop into a pastry or ziploc bag with the end cut with a 1/2 inch opening.
Pipe butter-cream onto the bottom cookie 9wrong side up), then top with another cookie (right side up).

Those are SO cute Melanie! I made cake cookies last night, too... except I added half a cup of oatmeal to the batter. Griff actually told me he wished I would have made the cream center for a homemade oreo type cookie. These would be a hit for the superbowl!

I just made these today. They were so good. My husband wasn't thrilled about missing out on cupcakes, now he feels it was worth it to try it. The only thing is mine were about double the size. :) Next time I've got to lay out less batter.
