I love bran muffins. If you don't like them, you haven't tried the right recipe! My favorite basic recipe is Mom's bran muffins but these are a fun variation. Luckily my kids love all the add-ins like banana, raisins, and walnuts because it has helped me branch out a little more as well! These muffins are moist, hearty, and just a little sweet... and good for you too!
Chunky Banana Bran Muffins

1 cup wheat bran
1 cup buttermilk
4 Tb butter (1/2 stick), room temperature
1/2 cup brown sugar, lightly packed
2 extra large eggs
1 tsp orange zest
1/2 tsp vanilla extract
1 1/2 cups flour
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp kosher salt
1 cup large-diced banana (1 banana)
1/2 cup chopped walnuts
1/2 cup raisins (optional)
Preheat oven to 350 degrees F. Combine bran and buttermilk; set aside. Cream the butter and sugar together until light and fluffy. Add eggs, one at a time, scraping down sides of bowl. Then add orange zest and vanilla. Add the bran/buttermilk mixture and mix to combine. Stir together flour, baking powder, baking soda and salt then slowly add into the mixing bowl. Mix on low until just combined. Fold in bananas, walnuts and raisins. Divide batter into 12 greased or lined muffin cups. Bake for 25-30 minutes or until toothpick comes out clean. Cool in pans.

where in the store is wheat bran? would it be a regular stores like kroger or walmart?
ReplyDeleteHi Crystal, you can buy prepackaged wheat bran in the baking aisle - by the different flours and sugars. However it is MUCH cheaper to buy it in bulk. I live in Seattle where we have a store called Winco that has tons of things in bulk. If you're from Utah it might be at Macy's in bulk. Not sure! Hope that helps!
