Greena Colada Smoothie

Ever since we got the Blendtec a few months ago, we have turned into a green-smoothie-slurping family!  The blender was a gift to my husband from his loving wife... and I will never, not in a trillion, million years, live it down!!   It doesn't matter that he had been saying for a year that he wanted it.  It doesn't matter that he is the healthy one of the family. It doesn't matter that he is very disappointed if he doesn't have a green smoothie every single morning now.  No, none of that matters because the fact remains that I gave him a kitchen appliance for Christmas!!  :)  Of course he was grateful and gracious but I could tell from the look in his eye that I was going to be teased til kingdom come for pulling this!  Kind of like the year he bought me a handgun for Christmas, when I specifically and repeatedly had told him I DO NOT WANT ONE!  Well, pay back is sweet! :) J/k.  I knew he would love his blender and he does (and of course I knew I would love it too, hee hee)!

So anyway, this is one of our very favorite green smoothies.  It's cool and delicious, light and refreshing.  And there is no way you can taste the spinach in this one.  Personally I love the citrus-y kick from the lime juice, yum!  Just ignore the fact that it's a lemon in the picture.  Occasionally I improvise but it's best with lime!  Greena Colada is a creamy, guilt-free, green twist on pina coladas that you will love!

3/4 cup light coconut milk
1/2 cup unsweetened coconut flakes
1/2 lime, juiced
3 1/2 cups pineapple chunks, frozen or well chilled
2 cups spinach
1/2 tsp vanilla extract
3 Tb agave nectar
1 cup ice cubes

Add ingredients to blender in order listed.  Blend until smooth and serve.  Makes 4 servings.

*If you don't have a heavy duty blender like Blendtec, you may need to increase the amount of coconut milk, especially if you are using frozen pineapple instead of fresh.

  1. I have been making a smoothie similar to this for years and it is still one of my kids favorites. I omit the sweetener and add Trader Joes frozen mangos (it gives it a real creamy texture). My recipe is coconut milk, frozen pineapple, spinach, frozen mango, ice, lemon or lime and sometimes I will throw in a dash of OJ. YUMMY and great for a healthy breakfast with a whole wheat banana muffin!

  2. Try kale and bananas in your green smoothies. Kale is so nutrient dense and you can't taste the 'green' in it. And bananas make green smoothies creamy and sweet.

  3. Where do you get agave?

  4. You are so right about both kale and bananas! I usually add 1-2 ripe bananas to my green smoothies- I think this is the only one without them! The agave and all that pineapple makes it sweet though.

  5. Hi Megan, I get my agave at Costco- it's A great price and we go through a lot. I'm not sure if all groceries stores carry it but I wouldn't be surprised. But you might need to try specialty grocers that cater more to health foods - like Trader Joes. I'm sure they would carry it. Btw, agave is a low-glycemic index natural sweetener that comes from a cactus. Looks like honey but thinner and tastes great.

  6. Oh man. I've got to get a blendtec. I'm going to try this out in my good old Bosch blender though. It is supposed to be 70 degrees on Thursday! Maybe I'll whip this out to celebrate.

  7. Thanks! I got some at Costco today. Any other suggestions or recipes of how you use it? We have smoothies a lot so I am excited to use it in them.

  8. Hey Megan, Mostly I use agave in smoothies but we will also eat it on oatmeal in place of honey... or as a sweetener in recipes that call for honey. But like I said, I mostly use it for smoothies! :) Even so, we go through a lot!

  10. It's been almost a year since you've posted this... seriously? where does the time go. Anyway, the kids and I just had this smoothie again for dinner. Colty was rubbing his tummy and saying "mmmm," and Jack said it was "Dee-licious!" This is a great smoothie!
