Here is a recipe for back to school barbecues, end of summer celebrations, and any other excuse you can think of for eating some really great coleslaw. My husband loves KFC cole slaw. And if either of us love something at a restaurant, sooner or later I start trying to make it at home. I have absolutely no idea if this is really even close to the KFC Cole Slaw recipe, but it is pretty darn good. In fact, my husband and I think it is actually much better than KFC! I've made it with and without onion. I definitely prefer onion, but for those who are not onion lovers (like my in-laws) this cole slaw is still really good without.
KFC Coleslaw

1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
8 cups chopped cabbage (about 1 head)
1/4 cup shredded carrot
2 tablespoons minced onion (optional)
Combine the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt and pepper in a large bowl. Whisk until smooth. Add the cabbage, carrots, and the onion. Mix well. Cover and refrigerate for at least two hours before serving. Serves 10-12 people.

Pretty close!! If you grate the onion instead of using minced onion it works out better, get the juice and thats where the flavor is!
ReplyDeleteI am not a coleslaw fan (too runny, too acidic, etc.) but maybe that is because I have never had it homemade. Maybe I should give this recipe a try before I declare my final opinions!
