Monterey Chicken
Author:
*Sometimes I marinate the chicken breasts before cooking and they were great. You don't have to though. Marinade: 1/4 c. olive oil, 2 T. soy sauce (or lemon juice or red wine vinegar), 2 tsp. McCormick Montreal Steak Seasoning. We only marinade about 30-60 minutes so it's not too salty:)
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 c. BBQ sauce
- 1/4 c. real bacon bits
- 1 c. colby and jack cheese, shredded
- 1 14 oz. can Rotel tomatoes, drained (canned with green chilies added)--OR use diced fresh tomatoes
- sliced green onions
- pepper
Instructions
- Preheat oven to 400 degrees.
- Pound out chicken breasts to flatten.
- Season with pepper.
- Grill chicken until no long pink (we used our George Foreman grill) and place on baking sheet covered with foil.
- Top each chicken breast with one tablespoon bar-b-que sauce, 1/4 c. cheese, 1/4 c. tomatoes, green onions and one tablespoon of bacon bits.
- Place in oven and bake until cheese is melted (about 5 minutes).

I came to the internet looking for a quick, yummy, dinner idea for tonight. Sure enough, up pops this chicken dish. It was just what I was looking for and boy was it good! My husband raved over it and my daughters (ages 3 and 1) both ate some! Winner, winner, chicken dinner! Thanks for the great recipe! We will be making this often! Oh, and just in case it matters, I used fresh diced tomatoes, cheddar cheese, and cooked my own bacon. Yum yum!
ReplyDeleteWe had this for dinner tonight and it was a total hit with my husband too! Apparently it's a great guy recipe. My husband said it was restaurant-worthy and sat there trying to figure out how it could be adapted for a our imaginary bed & breakfast! Thanks for the great recipe!
ReplyDeleteI hadn't planned ahead for dinner tonight and was looking for something to do with chicken breasts that didn't require a trip to the store. I had everything on hand for this and it was delicious! My husband really liked it.
ReplyDeleteI made this tonight and it was a big hit in my family, too! Plus, gluten free! I was recently diagnosed with celiac and am trying to find good recipes that my family loves-- and not too different from things I would cook before. I've been using your recipes for several years now, and love finding gluten free options from one of my favorite recipe sources! I hope you'll keep posting your gluten free successes! :) Thanks for the effort you put into sharing wonderful food.
