How to Make the Perfect Burger

Nothing kicks off summer better than a backyard BBQ or as they say here in the South a 'cook out'!  For years I bought those frozen preformed hamburgers that went straight from the freezer to the grill, but you know what?  They were never very good!  So, I started making my own, and WOW what a difference!  I will share the foundations for a perfect backyard burger,and some fun stir ins to can change it up if you desire!  One thing that doesn't change for my husband is the cheese.   He insists on Kraft Singles to melt on top.   It brings back childhood memories and in his mind a burger is not a burger without it!  Do you have a favorite way you grill your burgers?  If so, please share:)



The Perfect Burger

1 1/3  lb ground beef (I use Kirkland Brand Organic Ground Beef  -meium fat makes a juicy burger)
1 egg
1  heaping tsp of dijon
1 tsp worcestershire sauce
1 clove garlic, minced (bottled works great)
1/4 -1/2 onion, finely grated( I've used onion powder with great results too)
1/4 cup fine bread crumbs
1/2  tsp Johnny's Seasoned Salt (you could do regular salt and about a 1/2 tsp pepper instead)

FUN stir ins:


1 tsp lemon pepper
1 TB teriyaki sauce or hoisin sauce
1 fresh jalapeno or a few pickled jalapeno slices, chopped
1 tsp curry powder
1 TB fresh herb, such as oregano, parsley or rosemary
2 tsp Cajun seasonings
1 TB barbecue sauce
a handful of feta and chopped sun dried tomatoes
1/3 cup Parmesan cheese and 1/3 cup pesto
**As you can see, the sky is the limit when it comes to stir ins:)

A Few Tips for the Perfect Burger:


1. Brush your grill with oil and then heat to medium.
2.  Put  all the ingredients together in a bowl and add any "stir ins" your heart desires:)
3.  Using your hands or a fork, gently stir together.  Be careful to handle the meat as little as possible--the heat from your hands will start to melt the fat creating a dense and tough hamburger.
4.  Gently create 4- 5 patties that are 3/4 inch thick.
5.  Have you ever had your burgers form rounded tops when cooking, causing your condiments to slide off?  Well, the smart people at America Test Kitchens found if you use your thumb to create a small depression in the center of the burger, it will prevent that during cooking.  I have done this ever since I read that --and it works like a charm!
6.  Place hamburger patties on the preheated grill and close the lid!  Do not poke, smash or flip more than once!  This will make all the juices to come out and your will be left with dry as a bone burgers!  Leave on the grill until no longer pink inside, turning one time!  Usually this is 5-7 minutes per side, depending on how thick you made your patties.
7. The last few minute of cooking put a slice of cheese on top your patty.
8.  While the cheese is melting, toast your buns on the top rack of the grill.
9.  Gently place your perfect burger between your lightly toasted buns, and pile with your favortie toppings.  ENJOY!

Weight Watchers Turkey Burger

I love turkey burgers.  I've enjoyed making my Southwestern Turkey Burger recipe for years.  Yum!  So when I saw this new turkey burger recipe in our church cookbook, submitted by my friend Stephanie Ambrus, I was excited to try it out.  And it did not disappoint! Hope you enjoy!




Weight Watchers Turkey Burger

Ingredients


  • 3/4 lb ground turkey

  • 2 shallots (or 2 green onions), finely chopped

  • 1 tablespoon reduced-sodium soy sauce

  • 1 tablespoon ketchup

  • 1 teaspoon minced fresh garlic

  • 1/4 teaspoon freshly ground pepper

  • 1/3 cup shredded Monterey Jack cheese

  • 4 strips bacon

  • 4 hamburger buns, split and toasted

  • 1 tomato, cut into 4 slices




Instructions



  1. In a medium bowl, place turkey, shallots, soy sauce, ketchup, garlic, pepper, and cheese.

  2. Mix very gently with a fork to combine, being careful not to overwork meat.

  3. Form into 4 burgers.

  4. Cook bacon.

  5. Grill burgers and serve on the bun with bacon and tomato. I also like to serve the burgers with slices of sharp cheddar cheese, lettuce, and red onion.






Notes

*These are five points on Weight Watchers if you use turkey bacon. The original recipe called for it, but I am not a fan of turkey bacon so I had to replace it with the good stuff.

Pesto Burgers


I made a ton of pesto last fall... and I really mean a ton!  Usually I save my precious homemade pesto for my favorite recipes... like this, this and this to name a few.  However, with my new plethora of pesto, I have had some fun trying out new recipes.  These Pesto Burgers were definitely a keeper.  I mean, what a unique burger, right?  They were super easy (love that), and they feel kind of gourmet.  Perfect for when you feel like shaking things up a bit.

Pesto Burgers

2 lbs of ground turkey or beef (the burger in the picture is half ground turkey and half ground beef)
3/4 cup Parmesan cheese
3/4 cup bread crumbs
2/3 cup pesto
2 eggs, beaten

Combine all ingredients in a large bowl.  Form eight patties and grill in a skillet with a small amount of olive oil or grill.  Serve burgers with red onion rings, sliced tomato, lettuce, and feta (or gouda or swiss) cheese.  My traitorous husband and father put ketchup and mustard on theirs and thought it was pretty darn good that way, too.

Southwestern Turkey Burgers

My husband, Jed, and I never thought we would be turkey burger fans, but these burgers are delicious. Jed thinks they are fantastic. My friend, Katie W, submitted this recipe for a cookbook we made a few years ago. Last time I made these I was surprised to discover that I didn't have any lettuce in the fridge. Woops. So, even though my picture doesn't show all my preferred condiments, I like to serve these with lettuce, tomatoes, red onion slices (so good!), sharp cheddar cheese, on toasted buns. I toast the buns by spreading them with a little butter and putting them under the broiler for a minute.

Southwestern Turkey Burgers

Ingredients


  • 1 ½ pounds ground turkey (don't add more than this)

  • 1 jalapeño chile, minced (ribs and seeds removed for less heat, if desired)

  • 2 ounces grated Monterey Jack cheese (about ½ cup)

  • ¼ cup plain dried breadcrumbs

  • 2 tablespoons mayonnaise

  • Coarse salt and ground pepper

  • Vegetable oil, for grates

  • 4 hamburgers buns, split horizontally

  • Desired toppings (I like sharp cheddar, tomato, mayo, lettuce, and red onions)




Instructions



  1. Heat grill to medium-high. In a medium bowl, place turkey, jalapeño, cheese, breadcrumbs, mayonnaise, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat (which would make burgers dense).

  2. Gently form meat into 4 equal-size patties, 4 inches in diameter and 1 inch thick. Press thumb in the center of each patty to make an indentation approximately 1/2-inch deep (this helps keep burgers flat during grilling).

  3. Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper; grill until cooked throughout, 5 to 8 minutes per side. Serve on buns (toasted on grill), with desired toppings.

Teriyaki Burgers

This is one of Mom's recipes...and it is delicious! These burgers are so juicy and flavorful, you really don't need to add much. Just a fat slice of tomato and some lettuce and you're ready to go! However, my husband (a true cheese lover) had a slice of Swiss on his burger and loved it so that is definitely an option!



Teriyaki Burgers

2 lbs ground beef (or combo of lean ground beef and pork)
1/2 c bread crumbs
1/2 large onion, finely diced
1/2 c soy sauce
1/4 c sugar
1/2 tsp ground ginger
1/2 tsp garlic powder
1 egg

Mix the ground beef, bread crumbs and onion. Mix together the remaining ingredients then add to meat mixture. Form into patties and grill over medium heat until cooked through. Serve on sesame buns.
