Whole Wheat Blender Pancakes

I have been making these pancakes for years because they are very easy, very nutritious and my family loves them! They are hearty and healthy. A great way to fill up little tummies and start the day off with whole grains! I love these with fresh berries (or any fruit)and a drizzle of pure maple syrup or old fashioned buttermilk syrup. My oldest son nicknamed the buttermilk syrup-- "Bubbly syrup" and he makes it himself! I will include that recipe too. Enjoy! Even my littlest guy loves them!

Blender Wheat Pancakes
Blend:
1 cup whole wheat kernels

1 cup milkBlend wheat and milk for 3 minutes in blender.
Add:
½ cup milk
Blend for 2 more minutes.

Add:
2 eggs


½ tsp salt
½ cup oil

1 Tbsp baking powder
2 Tbsp sugar

Blend only long enough to combine. Cook on hot griddle. The batter is very thin.Connor’s Bubbly Syrup


½ cube butter (I use 2TB less)


1 cup sugar

¾ cup buttermilk

1 tsp vanilla

1/4 tsp baking soda

*the original recipe called for 1 Tb of corn syrup--which I leave out--I am not a fan of that stuff!

In a small saucepan heat butter, sugar, and buttermilk. After sugar is dissolved remove from heat and stir in the soda and vanilla. Mixture will fizz. Let rest, stirring occasionally. Serve warm with pancakes or waffles.

  2. Great idea. . .something to do with all that wheat we never use. I would love to see more recipes with wheat, I am totally clueless when it comes to using it.

  9. I just wanted to let you know that I love these pancakes. They are so light for being whole wheat. My 18 month old downs three of them in no time! They also freeze well, which saves me time on mornings I don't feel like or have time to make breakfast. Thanks!
