Chicken with Spicy Peanut Sauce



If you like Thai food, you are going to love this recipe. Even if you don't know if you like Thai food, you've got to try it! It tastes so fresh and has a great kick to it. This recipe came from Erin's friend Allison...thanks for sharing!

Chicken with Spicy Peanut Sauce

1 lb chicken breasts

1 green onion, cut into several pieces

1 piece of ginger, cut into several pieces

1 Tb cooking sherry

1/2 tsp salt

1/2 tsp sugar

a little water

Cook above ingredients together in shallow pan, covered, over medium-low heat for 20 minutes. Allow chicken to cool slightly, cut into strips. Make sauce while chicken is cooking.

Spicy Peanut Sauce:

1 Tb peanut butter

2 1/2 Tb canola oil

3 1/2 Tb soy sauce

2 T sugar

2 tsp vinegar

1/2 tsp sesame oil

1/2 tsp cayenne pepper

1 Tb green onion, minced

2 Tb cilantro, chopped

Whisk sauce ingredients together without cooking. Serve over chicken and steamed Jasmine rice.

  4. This was good. I used jasmine rice and left out the sugar and it was delicious w/o it. Next time I think I'll leave the sugar out of the salsa as it was very sweet. I found that the recommended 10-12" away from the broiler worked great. Thank you!
