I love this recipe for Butternut Squash! It is easy to make, and delicious for a chilly Autumn night. I thought the small amount of brown sugar was perfect. It caramelized with the butter to form a lightly sweet" crust" and was so tasty with the fresh ground pepper! yum! This was wonderful! I actually doubled this recipe and roasted 2 squashes. I made extra so I could it use it for Butternut Squash soup.
Does anyone have a great recipe they would recommend?
Simple Roasted Butternut Squash

1 medium butternut squash, halved lengthwise and seeded
2-4 tsp butter
2-3 tsp brown sugar
Kosher salt and fresh ground pepper
Preheat oven to 400 degrees F
Place butternut squash halves on a baking sheet or dish. Place 1 tsp of butter on the middle and smear a little on the flat part. Sprinkle with brown sugar and season with salt and pepper. Roast for 25-45 minutes, until flesh is fork tender. (Mine took 40 minutes)
Simple but it looks of so delicious.

ReplyDeleteGood squash! But I'd line the pan with foil first, because the brown sugar burnt onto the pan and now its really hard to clean.
