Simple Roasted Butternut Squash

I love this recipe for Butternut Squash! It is easy to make, and delicious for a chilly Autumn night. I thought the small amount of brown sugar was perfect. It caramelized with the butter to form a lightly sweet" crust" and was so tasty with the fresh ground pepper! yum! This was wonderful! I actually doubled this recipe and roasted 2 squashes. I made extra so I could it use it for Butternut Squash soup.

Does anyone have a great recipe they would recommend?

**Also, I am posting my weekly menu here, now with links (per requests) to many of the recipes.**

    I LOVED IT!
It's on the appetizer menu, but learned after dinner I could have ordered it as a meal too.

  18. Good squash! But I'd line the pan with foil first, because the brown sugar burnt onto the pan and now its really hard to clean.
