Chocolate Berry Shortcakes

This dessert is fun and unique and tastes great! Even better, it only has a few ingredients and comes together easily. I like that is looks pretty and individualized and yet the components are easy to prepare. Just whip the cream and bake the shortcakes early (did I mention they are made from biscuit mix?), and have fresh berries ready. You can throw them together in 2 minutes and they look beautiful! Definitely a fun twist on strawberry shortcake - especially for those of us that love chocolate!





Chocolate Berry Shortcakes

2 cups baking mix (ex: Bisquick)

2 Tb unsweetened cocoa powder

1/4 tsp nutmeg

3/4 cup vanilla yogurt

3 Tb honey

2 Tb canola oil

1 1/2 cups heavy whipping cream

1/3 cup powdered sugar

2 cups fresh berries (raspberries, blackberries, strawberries, blueberries, etc)

Stir together Bisquick, cocoa, and nutmeg; mixing well. Add yogurt, honey, and oil and stir until a soft dough forms. Drop dough by large spoonfuls on baking sheet lined with Silpat or parchment paper. Preheat oven to 425 degrees and bake shortcakes about 12-15 minutes or until toothpick inserted in center comes out clean. Allow to cool 20 minutes.

Whip heavy cream and powdered sugar with electric mixer until soft peaks form. Slice each cooled shortcake horizontally. Place a generous scoop of sweetened whipped cream on shortcake then sprinkle berries on top. Top with other half of shortcake and serve immediately. Makes 6 shortcakes.
