Brownie Stuffed Chocolate Chip Cookies


Do you ever debate whether to make chocolate chip cookies or brownies?  Both favorites... both amazing... hard to choose, right?  Well, choose no more! How about making them both and just stuffing the brownie into the cookie?!  The result is this out-of-this-world gigantic addicting cookie.  I would like to say I ate just one, but I didn't.  I ate like three in my first sitting.  And maybe another one before I went to bed.  I have only allowed myself to make them for parties since.  I'm protecting my waistline.  So now you're warned... you're going to love these babies!

PS The possibilities are endless for stuffed cookies.  What are some cookies you would stuff?

Brownie Stuffed Chocolate Chip Cookies

1 brownie mix (I use Betty Crocker and bake ahead of time)
1 cup butter, room temperature
1 cup sugar
3/4 cup packed light brown sugar
2 eggs
1 tablespoon vanilla
3 1/2 cups all purpose flour (I like fluffier cookies, so I add an extra 1/2 cup of flour for a total of 4 cups.  3 1/2 cups makes a flat cookie)
1 teaspoon salt
1 teaspoon baking soda
2 cups chocolate chips

Prepare brownies according to package directions.  Let cool completely then cut into 1 1/2 inch squares.

Beat the butter and sugars until light and fluffy.  Add eggs and vanilla and continue to beat until well combined.  In a separate bowl, combine flour, salt and baking soda.  Slowly add dry ingredients to wet ingredients along with the chocolate chips.  Place a scoop of dough on top of a brownie square and another smaller scoop on the bottom.  Gently press and enclose brownie with dough.  Place 6 filled cookies onto a parchment or silpat lined baking sheet and bake at 350 degrees for 18-22 minutes or until edges are golden brown.  Remove and let cool for 15 minutes before removing from baking sheet.

  5. Oh wow! I've seen brownie stuffed cookies before, but they usually look kinda messy, which makes me not want to make them. These look absolutely gorgeous! I'm going to have to try this recipe. :)
